  • Good cheddar is expensive. I suspect this graph is very generous in what it considers cheddar.

Globally, the style and quality of cheeses labelled as cheddar varies greatly, with some processed cheeses packaged as "cheddar".¹

Processed cheese typically contains around 50–60% cheese and 40–50% other ingredients.²

It:'s also fundamentally a bit weird to compare the prices of these cheeses, as cheese prices tend to be extremely local in nature. What's a fancy foreign cheese in one place is just traditional food in another. And of course, price and quality varies a lot within each cheese. A lot of what is sold as mozzarella is also not recognizable as such in my opinion.

  • Fresh cheese, such as mozzarella and ricotta, is quicker to make, and a lot less concentrated. It doesn't need ageing, and there's a lot less milk going into a kilo of cheese. It's also less work.

On the flip side, they don't last as long. If you want to get fresh ricotta and you live far away from where it's produced it might cost you a fortune, as it cannot be stored in the cheese shop as long as a wheel of aged cheese.

  • The story of how Zappa and the Mothers got a contract is amazing. Basically a label guy walked into a gig as they played Trouble Every Day, their only song ever with conventional commercial potential, and signed them on the spot.

Once they got to the studio and started playing some tremendously weird stuff it was too late to stop them.

  • Nice four seconds video, I guess? Very smooth how it cuts off mid-sentence, not weird at all.

I like how we can feel completely confident that no valuable context is lost, and that it allows us to quickly reach our conclusions and move on with our lives. Whoever has an attention span greater than four seconds these days anyway.

  • The Android keyboard always worked well for me, but I don't trust them one bit. So I changed my phone keyboard into something that is worse at guessing what I'm trying to say, but I'm somewhat confident I am not being surveilled through it.

I started using it a month or two ago, and ever since I have started making a billion typos when writing on mobile.

Also, I guess the demography of the communities you're in matters. I think quite a few of us over here are not native speakers. Sometimes I'll also write with my keyboard set to the wrong language by accident, "leasing to all mines" of freaky autocorrects.

  • Ready for a quick summer campaign, wearing boots with iron heels. These men are perfectly equipped to freeze to death in a few months.

Their commanders knew full well that the Russians did not hesitate to sack Moscow when Napoleon came marching in, and they had no reason to believe things would be any easier this time around.

At first glance, this looks like a picture of soldiers advancing rapidly and successfully. In reality it shows the beginning of the end of the Third Reich.

  • Especially if they don't take themselves oversly seriously.

Be your goofy self, if people are turned off by that you would never be happy with them anyway.

Edit: That said, this logic only applies if you do it for yourselves because it's fun. If it's something you do as a dating strategy it is, indeed, doomed.

  • Anyone who could make this news break would be in a position to steal unfathomable amounts of money in broad daylight, and get away with it.

I think we should always suspect bad actors in cases like this, and investigate thoroughly. It's too easy of a scam with too much money to be made.

Maybe there is nobody to blame. But assuming so just seems incredibly naive to me considering the amount of bad actors and the ease of pulling a stunt like this.

  • Yeah. Money is not lost in finance markets, it is redistributed. Reading any of this as random and/or unintentional is beyond naive.

  • "you'll begin to see it once you get sucked into the lore"

Ignoring the stupidity of the overall argument and concept, if there is such a thing as a "lore" for the fediverse I feel like a somewhat important part of it is that like half of its developers are trans people.

Sure, that doesn't mean there won't be trolls over at "free speech extremist" instances, it just means that they can be easily silenced and marginalized. As was the intention from the start, invented in large part by the trans people who pioneered this.

To say the lore of the fediverse is transphobic is just so utterly fucked. If anything, the lore is trans. But who the hell even speaks of the lore of a protocol. I can't even.

  • They turn protests into BBQ parties.

They've even made rolling BBQs to roll with them. So an incentive to show up s to get your protest sausage, and protesters don't have to worry about getting food.

I feel like this is a concept Americans should at least be able to match, if not improve upon.

Lyrics don't get much more iconic than this.

Another mining song I love is "The L&N Don't Stop Here Any More" by Jean Richie, about the experience of growing up in a coal town after the mine has shut down (and the Louisiana-Nashville train - the L&N - no longer bothers to stop there).

Ritchie, who grew up in Viper Kentucky, initially didn't dear to release it under her own name as the subject of empoverished coal miners was too controversial.

I used to think my daddy was a black man With script enough to buy the company store

  • He doesn't even give a shit about any of this, and he probably couldn't place Turkey on a map. He's just giving in to pressure from the regime at the slightest hint that X might be made unavailable should he not comply.

It's not about anything except profits. He would gladly kiss the ring of any dictator willing to pay him for it.

It would almost be less terrifying if he had some sort of fucked up ideology at the core of this. But nah - it's just unhinged capitalism.

  • Nevertheless, I believe that detaining European journalists for simply showing up indicates that the regime is more nervous now than it has ever been.

  • For those who didn't catch Pikachu (got it?) in Antalya, here he is fleeing the fuck away from the police.

Anyway, there's a bunch of music written especially for situations like this. Nothing builds community quite like singing songs together. It's a good time to dust of your grandfather's old Pete Seeger records, practice the songs, and take them with you.

I'm making some effort to revive the community [email protected], which is dedicated to sharing songs of resistance. Feel free to make contributions!

  • I agree Trump is normalizing authoritarianism, but I'm not sure he has had much of an impact on Erdogan. Erdogan has been leaning into authoritarianism for ages now, but few have protested as the economy has been strong. Now that he has destroyed the economy as well and people are protesting, he has nothing except the authoritarian textbook to protect him.

  • I have no doubt we will!

While we still doesn't have all kinds of active niche communities over here, it is incredible how much the community has grown since I first came here. And that's not really all that long ago.

    Thanks for joining us! :)

Swedish journalist detained in Turkey for intention to cover protests

Swedish journalist Joakim Medin has been detained in Turkey after arriving in Istanbul on Thursday to report on the current protests.

Since Medin notified his editor in chief that he was being taken in for interrogation – around lunchtime on Thursday – nobody has heard from him.

Joakim Medin is a regular contributor to daily newspaper Dagens ETC and has reported from and about Turkey regularly for several years. We do not as yet know where or how he is, and we are imploring the Swedish government to take action to help us get Joakim home.

The chief editor of Dagens ETC wrote the following commentary on the decision to make this public, machine translated using FireFox:

This is what Dagens ETC's reporter Joakim Medin wrote yesterday when he landed in Istanbul to monitor recent developments:

"They are taking me in for interrogations now"

Woody Guthrie - All You Fascists Bound To Lose

Woody Guthrie was never too vague about his stance on fascism, starting with the famous phrase "This Machine Kills Fascists" written on his guitars.

"All You Fascists Bound To Lose" is a song that takes this bluntness to a lyrical level, to the point where it hardly needs any introduction.

    I’m gonna tell you fascists
    You may be surprised
    The people in this world
    Are getting organized
    You’re bound to lose
    You fascists bound to lose

    Race hatred cannot stop us
    This one thing we know
Your poll tax and Jim Crow
And greed has got to go
    You’re bound to lose
    You fascists bound to lose.

All of you fascists bound to lose:
I said, all of you fascists bound to lose:
Yes sir, all of you fascists bound to lose:
You’re bound to lose! You fascists:
    Bound to lose!

    People of every color
    Marching side to side
    Marching ‘cross these fields
    Where a million fascists dies
    You’re bound

  • Here's how it's described on GitHub:

    PieFed

A Lemmy/Mbin alternative written in Python with Flask.

    • Clean, simple code that is easy to understand and contribute to. No fancy design patterns or algorithms.
    • Easy setup, easy to manage - few dependencies and extra software required.
    • AGPL.
    • First class moderation tools.

    Project goals

To build a federated discussion and link aggregation platform, similar to Reddit, Lemmy, Mbin interoperable with as
much of the fediverse as possible.

In short: You know how different Lemmy instances can communicate with each other? That's not limited to Lemmy - they can really communicate with any website running software willing to speak their language.

PieFed is another such software, along with Mbin. So it's basically a Lemmy alternative. It has different features: No mobile app support or alternative user interfaces yet (though it's coming), but in return other useful features such as keyword filters and feeds.

The fastest way to learn about it is probably by visiting piefed.social and checking it out yourself. :)

Mastodon has merged "fetch all replies"!

This is pretty huge news for Mastodon users: Once this feature is up and running comments to a post will not be limited to whatever is federated to your server through indirect means. The whole platform should feel a lot more vibrant after this, and it addresses what has been one of the main complaints about Mastodon.

It is summarized like this by @[email protected]:

Some good news about #Mastodon, there has been a very significant bit of code added which will automatically fetch all the replies in a thread. This means everyone will be able to see a thread's whole conversation no matter which server they are on! 🥳

The code has just been "merged" which means it should become available in the next update to Mastodon, hopefully within the next few months.

I found this to be a great write-up on how social media enables fascism by providing a sense of false agency: Posting online we feel like we are doing something, and we end up wasting our time shouting in a void rather than actually resisting.

Many of my journalist colleagues have attempted to beat back the tide under banners like “fighting disinformation” and “accountability.” While these efforts are admirable, the past few years have changed my own internal calculus. Thinkers like Jean-Paul Sartre and Hannah Arendt warned us that the point of this deluge is not to persuade, but to overwhelm and paralyze our capacity to act. More recently, researchers have found that the viral outrage disseminated on social media in response to these ridiculous claims actually reduces the effectiveness of collective action. The result is a media environment that keeps us in a state of debilitating fear and anger, endlessly reacting to our oppressors instead of organizing against them.

Meta censors hashtags such as #democrat on Instagram

At a moment when Zuckerberg's focus is clearly on sucking up to the Trump administration, Instagram goes the extra mile to block hashtags like #democrat and #democrats from Instagram.

Officially it's a mistake, with some tool from the company giving the following statement:

We're aware of an error affecting hashtags across the political spectrum and we are working quickly to resolve it.

Despite their claim to affect "across the political spectrum", the "problem" seems to affect both #democrat and #democrats, but neither the hashtags #republican nor #republicans.

With two months left in office, the president for the first time authorized the Ukrainian military to use the system known as ATACMS to help defend its forces in the Kursk region of Russia.

President Biden has authorized the first use of U.S.-supplied long-range missiles by Ukraine for strikes inside Russia, U.S. officials said.

The weapons are likely to be initially employed against Russian and North Korean troops in defense of Ukrainian forces in the Kursk region of western Russia, the officials said.

Mr. Biden’s decision is a major change in U.S. policy. The choice has divided his advisers, and his shift comes two months before President-elect Donald J. Trump takes office, having vowed to limit further support for Ukraine.

Allowing the Ukrainians to use the long-range missiles, known as the Army Tactical Missile Systems, or ATACMS, came in response to Russia’s surprise decision to bring North Korean troops into the fight, officials said.

Is there as much enthusiasm for Trump online today as eight years ago?

I remember when Trump first won, the American-centered part of the web I would occasionally stop by seemed completely infiltrated with MAGA trolls. You had this feeling people thought it was edgy and fun - the worst kind of cultural moment seemed to be happening.

This time around I'm not so much on mainstream social media. And when I do check them out, it seems hard to understand what the vibe is as most content is AI or from professional content creators.

The closest thing I see to Trump supporters these days seems to be the enablers who endlessly repeat how they won't vote for Harris for some dumb reason or another - they simply cannot vote for a black woman president because it's not progressive enough, and all that jazz. But I don't ever see Trump supporters.

Of course they exist still. I have just chose social media platforms strategically to avoid toxic people.

So I'm wondering if the same enthusiasm for Trump that seemed to be boiling online in 2016 is still ther

Norway takes Israel's UNRWA ban to the International Court of Justice

Norway asks the International Court of Justice (ICJ) to clarify whether Israel is violating international law. On Monday, Israel adopted new laws that effectively ban the UN aid organization for Palestinian refugees.

Norway, the UN, the USA and several countries have reacted strongly to the fact that the majority in the Knesset passed two new laws on Monday evening which will ban the UN aid organization for Palestinian refugees, UNWRA.

One law prohibits UNWRA from operating in Israel and the Israeli-occupied territories from next year.

The second law stipulates that Israel labels the UN aid organization as a terrorist group and breaks diplomatic ties with the organization.

This means that the Israeli authorities are prohibited from having any contact whatsoever with the UN organisation.

Foreign Minister Espen Barth Eide (Ap) said in a press release yesterday that Norway strongly distanced itself from the decision.

Backup over home network - seeking advice

I am currently using GNOME Backups (aka Déjà Dup Backups) to backup all my files to a "backups" folder in my Dropbox. This is not a good solution - first because I want to stop paying for dropbox, second because I don't want to keep everything in the cloud, third because everything is stored twice on my laptop and storage is precious.

I therefore want to manage back-ups locally instead. I would like to keep using Déjà Dup, as it has worked really well and effortlessly.

My initial idea is very bare bones. I could keep an old laptop running 24/7, connect a hard drive, and use SSH file transfer in Deja Dup in order to store everything on that machine. That said, I have a few concerns as well.

    1. Is this a good way of doing things? Should I be doing something else instead?

I picked up a Ducky One Mini at a flea market yesterday, and after cleaning it extensively it seems to be working pretty well for the most part. I'm using it for writing and coding, so not having dedicated arrow keys will take some getting used to, but other than that it seems neat enough for the price I paid.

I used a tool that maps keyboard presses in Linux (xev), and it showed nothing when Alt Gr was pressed (just like the Fn button), so it seems no signal is being sent from the keyboard to the computer.

It could be that this is due to some setting made by the previous owner, or maybe there's something else going on. Maybe I need to update the firmware. Maybe it's broken. I have no idea.
