London has been crowned the best city in the world for vegans in a recent study by Happy Cow, with over 3,000 vegan-friendly restaurants.

I was lucky enough to come across this recipe which provides me with a scrumptious and nutritious meal. I thought I'd share it with the wider vegan community.
