I see the tops of people's heads a lot, I know you're balding before you do. You're also right about the background stuff, especially in crowds its nice to be able to see everything. Im only 6'4 too nothing crazy. Throw on my boots and I'm 6'6 though.
So, one of the smartest breeds. You can teach it to do anything. Figure out what its biggest motivation is (treat, play, touch ect) and start using that as a reward when trying to teach a new behavior. I'd recommend using youtube/the library to see specific training techniques. You have a very smart and trainable dog.
